Whats-it Dealy Sandwich

I have no idea what to call this sandwich.... it's sort of a formula more than a specific recipe. It's hummus, cheese a leafy green vegetable (like spinach, kale or chard) on crusty sourdough bread. It's amazingly delicious. All you do is toast it until the greens wilt and the cheese melts. It's so easy!!!

This is a basic sandwich that you can add alot of things to.



What you're gonna need:
Crusty sourdough bread
Hummus
Your favorite cheese
Leafy green (kale, swiss chard, spinach)

This is seriously simple. If you're using a leafy green with a thick crunchy stem like celery you're going to want to wash it, dry it and then pull the leaf off of the stem. Rip it up into little pieces that will fit on a sammich.

Get two pieces of your bread. On one side spread hummus and top with the greens. Squish the greens into the hummus a bit so they don't fall off. On the other side put some crumbled or grated cheese. I prefer more hummus than cheese on my sandwich. Put the cheese half in the toaster oven set to 350 degrees. When it starts melting put the other half in and leave them in until the greens start wilting and the cheese is fully melted.

Join the two halves and consume!

Additional toppings:
Pesto
Tomato
Roasted red bell pepper (stick a whole one in the oven wrapped in foil until it turns bright red and is very soft)
