Breakfast Tacos, two ways

For starters, I'll be plain. I suck at cooking scrambled eggs. I get scrambled mess. If you're good at cooking them scrambled then all the more power to ya! I made them with hardboiled eggs this morning. It was delicious and easy and I didn't screw it up!

You can make your eggs with just about anything. If you're going to make scrambled eggs you'll incorporate your selection of ingredients into the eggs. If you make it with hardboiled eggs you'll sprinkle these on top.

You could use:
Mushrooms
Cheese
Bell peppers
Green onion
Potato (but it will need to be cooked before incorporated into the eggs)

Really you can experiment with anything. These are just suggestions and some of my favs.

Here are instructions on how to make a foolproof hardboiled egg!

Fill a small pot with cool water. Put the eggs in the cool water. Let the eggs heat up with the water. Bring the water to a boil. As soon as it comes to a  rolling boil put a lid on and turn off the heat. Wait fifteen minutes and replace the still-warm water with cold water. VOILA. Perfect hardboiled egg. I added ice to the cold water and that helped the egg separate from the shell even better. The point is to make the egg flesh inside shrink away from the shell so it can be peeled away easier. For the breakfast tacos you want to chop up the egg in nice bite size pieces.

I can tell you in theory about how to make perfect scrambled eggs but they aren't my forte. Here are some theoretical tips:
  • Move the eggs as little as possible
  • Try to keep them in one pile instead of separating them
  • Non-stick pan, or else butter the pan
  • Use medium heat
  • Don't fear them or they will get messed up in spite of you
  • Oh yeah, don't forget to season them!
Once you have prepared your eggs, apply them to a warm tortilla maybe with some salsa and your choice of fixin's if they aren't already in the eggs. Enjoy delicious, protein-rich eggies!
