Fajitas with All the Fixins

Mm boy, do I love fajitas. So here's how to make vegetarian fajitas with as much stuff you can fit in on. I recommend buying the extra large wheat tortillas for these. The normal taco size doesn't hold enough goodies.

The way I make these is with "refried" black beans, guacamole, cheese, and sauteed onions and peppers. I'm going to add a list of other yum yums you can use at the end.

To make refried black beans:
Two cans of black beans
Two cloves of garlic minced (optional)
Two stalks of green onion chopped (optional)
Olive oil
Salt, pepper, red pepper flake, garlic powder, cumin

To make the beans you need to put two tablespoons on olive oil in a smallish pot and heat that up over medium heat. Put in about a teaspoon of cumin and all of the other spices. You can always doctor it up with salt later so don't worry about that too much right here. Let all of that get toasty but don't let it burn. When it starts to get fragrant you'll know it's time for the beans. Toss in those beans, both cans, with liquid. That starchy liquid is exactly what we want right now. It will help make the beans turn thick. Let the beans start to bubble and when they've cooked for a while mash the crap out of them. You can use a potato masher or any other implement, as long as it gets the job done. Let those cook down but make sure you're stirring them because they like to stick to the bottom and burn. When they get thick kill the heat and cover them. They're ready!

Mmkay and to make the sauteed peppers and onions, you need:
Any kind of peppers you like, red, yellow, green
One whole onion
Olive Oil
Salt, pepper, red pepper flake

Chop up the peppers and remove the seeds and white membrane stuff. Cut up that whole onion however you like it. Now start a pot on the burner over medium heat. Add the olive oil when it comes up to temperature and the spices (pepper and the flake). When that becomes fragrant toss in the peppers and onions and salt. Stir that up. You're going want to move this around a bit so everybody gets cooked equally. Depending on how you like your peppers and onions you may want to cook them more or less. I like my peppers and onions just soft with a little crunch. Or you can take it all the way and caramelize the onions and soften the peppers. However you like.

And of course, guacamole! You'll need:
2 avocados
1 lime
Garlic salt
Garlic powder
Optional:
Tomato
Cilantro, parsley
Onion
Garlic

Kitchen Essentials!!!
I always keep finely ground pepper, garlic salt and garlic powder on hand. Even in the dorm cooking those are essential seasonings you can not afford to live without. They can be used to spice up just about anything. Also olive oil, if you've noticed it comes in handy ALOT. It's also heart healthy.
