Hangover Breakfast

Dad and I made this together one morning. It is a dish of farro (an ancient grain that is the ultimate in satisfaction) in a tomato sauce. You poach two eggs on top of the farro-tomato mixture in a pan. It is amazing how filling and hearty this is. This is a lumberjacks breakfast for sure. Eat this with a hot-ass cup of coffee and you're ready to go.

I stole the idea out of a magazine. The reason I'm posting it is because the magazine didn't have measurements or steps. It said farro in tomato paste with eggs poached on top. So, I feel like because I took some artistic liberties with filling out the middle that I get to pass it along to you guys. Also, because its freaking great. You're gonna love it.



For the tomato sauce, you can either make your own or used canned tomatoes. So far I have only made it with canned tomatoes but will make a point to make it the other way too. I would prefer to use fresh tomatoes and will add that as soon as I can.

Hokay, so you are going to need:
4 eggs
1 onion
5 or 6 garlic cloves
4oz can tomato paste
1 cup uncooked semi-pearled farro
Red pepper flake, optional
Olive oil
S&P

Get a pot and fill it with water and put to boil. When it boils add the farro. When they are cooked they will be chewy but also creamy. When they're done add to the sauce below.

So you're going to want to dice the onion and garlic. Sautee that in a pan with a little olive oil until they are fragrant and almost translucent. Put in all of the tomato paste and S&P. Also add pepper flake if you want it to have a little nip. If it needs a little more liquid you can add a bit of chicken stock. When it is seasoned crack four eggs right on top of the sauce. Season the eggs with a little sprinkling of S&P. Cover with a lid and let simmer. If they need a little extra cookage. Add to an oven set to 450.


Make sure you get some sauce, farro and onion along with at least one egg. If you're really hung over, forget the plate and eat straight out of the pan. Don't burn yourself!!! AND ENJOY.
