Hot Salad with Garlic and Rice Wine Vinegar

Mm, this hot salad is delicious and nutritious. It's basically the best new way to have salad. Sauteed baby greens with red onion, garlic and rice wine vinegar for a little oomph. I made this with my spanish potatoes and let me tell you, it's an awesome combination.


You're gonna need:
Big box of baby greens of spring mix
1/2 red onion
5 cloves of garlic
1 tbsp olive oil
2 tbsp of rice wine vinegar
S&P

This is so freaking easy. Heat up your pan over medium. When it's hot put in the olive oil, garlic, onion and vinegar. Let that go until the onions are soft and a pretty purple-pink. It should be fragrant and DELICIOUS smelling. Toss in all of the spring mix and keep moving to coat with the oil. The greens will wilt down pretty fast so keep them moving. When they are hot and soft add in salt and pepper. Taste and adjust the seasonings. When it's perfect, move to a serving bowl or eat straight out of the pan. It's just too delicious.
